Delicious! Goya Chanpuru (Bitter Melon Stir-Fry)

My parents harvested a lot of bitter melon, so I thought of recipes to use it. I compared the taste with store bought sauce, and now I don't need store bought sauce any more.

To get rid of the bitterness, remove the white inner parts as much as possible. Slice the bitter gourd thinly, and rub with 1 tablespoon of salt (for a 20-30 cm long vegetable), and then soak it in water for about 10 minutes. Not all of the bitterness will be eliminated, but it will reduce to about the level where you just sense it as an aftertaste. In addition, freshly harvested bitter melon is less bitter. For 4 servings. Recipe by Himawarichan

Ingredients

4 servings
  1. 1about 20 to 25 cm long Bitter melon
  2. 150 gramsPork
  3. 200 gramsFirm tofu
  4. 2Eggs
  5. 1packet Bonito flakes
  6. ★Seasonings:
  7. 1 tbsp★Sake
  8. 1and 1/2 tablespoon ★Soy sauce
  9. 1 tbsp★Oyster sauce
  10. 1 tsp★Dashi stock granules
  11. 1 tbspSesame oil
  12. 1Olive oil or vegetable oil
  13. 1 tbspCake flour
  14. 1Salt, pepper

Steps

  1. 1

    Slice the bitter melon, rub with salt, and soak in salted water for at least 10 minutes. This reduces the bitterness.

    Wrap the cut tofu in 3 to 4 layers of paper towels. Microwave for about 1 minute at 600 W to get rid of the water.

    Season the pork with salt and pepper, and coat in flour. The meat will be tender that way.

    Put olive oil in a pan and saute the tofu. When the cubes are browned, remove from the pan.

    Add sesame oil to the pan and stir fry the pork, then add the bitter melon and continue stir frying.

    Put the tofu back in, and add the combined ★ ingredients.

    Swirl in the beaten egg, add the bonito flakes, mix everything together, and it's done.
