So delicious!! I love the sweet and spicy in this dish. I usually use 1 green cayenne and 1 red cayenne and it comes out perfect. If you only like a little heat, you can substitute the cayennes with green or red bell peppers to tone it down a little.

Ingredients

  1. 2 canwhole kernel corn
  2. 2 smallgreen cayenne peppers
  3. 1 tbspcajun or creole seasoning
  4. 1 tbspmargarine
  5. 1/2 tbspolive oil

Steps

  1. 1

    Carefully remove seeds and from peppers and chop into small pieces.

  2. 2

    Heat oil in a small sauce pan over medium heat. Add peppers and cook until soft.

    Drain the cans of corn and add to sauce pan.

    Stir in seasoning. Add less or more, depending on how hot you like it.

  5. 5

    Add margarine and reduce heat to low. Simmer for about 10 minutes or until the margarine thickens and coats the corn evenly.
