Potato Gnocchi with Basil and Parsley
I have prediabetes, so I’m much more careful about avoiding sweets and refined flours. So I started experimenting 🤣
Steps

If you don’t have extra fine oats, blend regular oats in a blender until fine.

Boil the potatoes (cut into pieces), then mash them. Add the seasonings.

Chop the basil and parsley into small pieces. Add them to the mixture along with the egg, and knead while gradually adding the cornstarch.

The dough should look like this.

Divide the dough into small portions and roll into ropes.

Cut the ropes into small squares.

Shape the gnocchi if you like. To prevent sticking, dust with more cornstarch.

Boil the gnocchi until they float, then serve with your favorite sauce.
