Ingredients

Serves 3 servings
  1. 1 poundfresh or frozen mushrooms (450 g)
  2. 2 cupsfresh or frozen carrots, cut into thick pieces (about 10.5 ounces / 300 g)
  3. 2/3 cupchicken broth made with a bouillon cube (150 ml)
  4. 1/4 cuplight sour cream (15% fat) (60 ml)
  5. 2 tablespoonscornstarch (15 g)
  6. 1 tablespoonbutter (15 g)
  7. 1 tablespoonolive oil (15 ml)
  8. 12.5 ounceschicken breast (about 360 g)
  9. 2-3 packetsrice
  10. Salt and pepper
  11. Curry powder
  12. Chopped parsley for garnish

    Start by preparing the mushrooms. Slice them. Peel the carrots and cut them into thick pieces.

    In a Dutch oven, add the butter and olive oil. Sauté the carrots and mushrooms. Add the chicken broth and curry powder to taste. Let simmer for 5 minutes.

    Add the sour cream and cornstarch. Stir immediately so the sauce thickens.

    Cut the chicken into pieces. Add it to the pot. Season with salt and pepper. Stir and let simmer on low heat for 15 minutes.

    Meanwhile, cook the rice in a pressure cooker for 10 minutes on high pressure.

    Transfer your blanquette to a serving dish.

    You can also serve the rice in a dish and place the chicken blanquette in the center.
