Chicken tacos dorados are one of my favorite Mexican dishes, but since they're usually very greasy, I rarely get to eat them. So I decided to improvise a lighter recipe, and they turned out great. I used low-carb and low-fat ingredients, but you can also make them with corn tortillas and regular sour cream.

Ingredients

  1. 5nopal tortillas
  2. 3.5 ozcooked, shredded chicken (about 100 grams)
  3. nonstick cooking spray
  4. as neededlow-fat sour cream
  5. as neededgreen tomato salsa
  6. as neededshredded romaine lettuce
  7. as neededshredded cheese (optional)

Cooking Instructions

    Prepare the ingredients. Since nopal tortillas are small, I used 5, but if you use corn tortillas, just use 3. Preheat the air fryer to 350°F (175°C). Warm the tortillas to soften them, then fill each with shredded chicken.

    Secure the tacos with toothpicks, joining them in pairs or threes if you like. Place them on the air fryer rack and lightly spray with nonstick cooking spray. Air fry for 5 minutes, then remove the toothpicks, separate the tacos, and flip them over.

    Return to the air fryer for another 5 minutes until golden and crispy. Place on a plate and top with shredded lettuce.

    Spoon sour cream over the tacos, then add green tomato salsa to taste. You can sprinkle shredded cheese on top if you like—I didn't because I can't have it. Enjoy!
