Easy Marinated Eggs, Great For Ramen

An older classmate of mine taught me how to make these easy marinated eggs. It's really easy, so I wanted everyone to make it and uploaded the recipe.

Peeling the eggs in ice water makes it easier. I wanted to make the eggs soft boiled, so I tried boiling them for 7 minutes, but they didn't become firm enough and fell apart. The right timing is less than 8 minutes, about 7 minutes 40 seconds. If you boil the eggs for 8 minutes the eggs will be quite firm and suitable for bentos. You can keep the eggs in the refrigerator for about 3 days. Recipe by Hanano arashi

Ingredients

  1. 5Eggs
  2. 200 mlWater
  3. 1for the marinade: 1 teaspoon Bonito flavored dashi stock granules
  4. 1for the marinade: 60 ml Soy sauce
  5. 1for the marinade: 2 tablespoons Sugar
  6. 1for the marinade: about 3 cm Kombu
  7. 1 dashSesame oil
  8. 1 dashThe white part of a Japanese leek, finely julienned

Steps

  1. 1

    Take the eggs out of the refrigerator and let them come to room temperature. Put them in boiling water for a little less than 8 minutes. 7 minutes 40 seconds is just right for soft boiled eggs.

    While the eggs are cooking, combine the marinade ingredients and microwave. You can simmer the mixture instead, but microwaving is easier. Mix it up well after microwaving.

  3. 3

    Put the boiled eggs in ice water and peel them. They will peel cleanly.

  4. 4

    Put the eggs in the marinade.

    If you put the eggs in the marinade in the morning the eggs will be done by the evening. If you make it in the evening, the eggs will be nicely flavored for bentos in the morning.

  6. 6

    Drizzle with some sesame oil when eating. You can also garnish the eggs with the white part of a leek finely julienned to make them look very pretty.

  7. 7

    Be sure to add the eggs to the boiling water very gently. Boil them over fairly high heat.
