Roll out 2-foot piece of tin foil near stove top.

Heat large non-stick skillet over medium-high heat (PAN MUST BE VERY HOT WHEN CHICKEN IS ADDED).

Pile shredded cheese on the tin foil.

Season cheese with pepper (NO SALT! ALREADY ENOUGH SALT IN CHEESE)

Press chicken firmly into cheese and coat both sides with as much cheese as possible.

Add 1 tablespoon olive oil to skillet

Set chicken into skillet and cook 5-7 minutes on each side (until cheese forms even, golden casing around chicken)
