Sprinkle the cod with white wine and leave for a while. Pat it dry with paper towels and season with salt and pepper.

Line a baking sheet with kitchen parchment paper and place the cod on it. Spread the cod with mayonnaise.

Top with cheese.

Sprinkle with panko, rosemary and parsley.

Bake the fish in a 250°C oven for 10 to 15 minutes. I recommend baking some cherry tomatoes along with the fish.
