These Spring Rolls are made in Chinese style and uses homemade Spring Roll wrappers. They are then shallow fried or air fried to get a crispy outer coating while there is an added crunch of stir fried vegetables inside.Serve these Chicken and Mixed Vegetables Spring Rolls with Hot and Sweet Chilli Garlic Tomato Sauce or any dipping sauce of choice.

Most Spring Roll wrappers are made of three basic ingredients : flour, salt and water. 1-2 tsp oil may be used while kneading the dough. Add warm water gradually to make a smooth pliable dough.Leave this dough covered while it comes to room temperature. Divide into small equal 12 balls and roll each of them into 4 inch circle and 2 mm in thickness.

Stack 3 circles one on top of another, brushing some oil and sprinkling flour.Re-roll them even thinner.Repeat the same process with the other doughs.Pre-cook them in a non-stick pan seasoning with 2 drops oil and peel and separate them.Browned to a golden perfection with layers of ultra crispiness, these wrappers are the most important part of spring roll making.

In a medium pan, saute minced garlic and ginger until fragrant.Add chopped onion and green chillies and saute. Next add julienned carrot. Stir fry few minutes on high flame.Next add sliced beans and capsicum.Saute 2 minutes and add boiled and shredded chicken,Masala Chilli Garlic Sauce, soy sauce,salt and pepper.Cook until 80% cooked.Sprinkle chopped coriander and toss to mix well.Remove from heat and cool.

Place 1.5 tbsp filling on the uncooked side of the wrapper.Roll gently but securely.Once folded halfway,smear flour slurry, tuck in the edges towards centre and roll till done.Press lightly to seal all sides.Repeat with other rolls.Heat 2 tbsp oil in a pan and fry till golden brown and crisp on all sides.Serve hot with a dipping sauce.
