Heat a pan. Add sago in it. Dry roast sago for 5 minutes without changing its colour.Cool down. Take a mixer jar. Add the roasted Sago in it. And make the flour.

Sago Flour is ready.

In a mixing bowl add Soaked sago, mashed potatoes, cumin powder, salt to taste, red chilli powder, crushed peanut powder and add sago Flour as required to bind in dough shape. Now make equal balls of it. And flatten it.

In a kadhai heat oil. Deep fry the Sabudana/Sago Vada.

Serve hot with curd, peanuts chutney, coconut chutney, cucumber raita, etc...
