This is my vegetarian version of it.

Ingredients

1 hour
4 servings
  • 10-12baby potatoes
  • 1/2 cupcornflour
  • 2 tspbesan
  • 2 tsprice flour
  • 3/4 cupcurd
  • 2onions
  • 8-10garlic cloves
  • 2 tbspsoaked red chilli-garlic paste
  • 1 tspchilli-ginger paste
  • 1/2lemon
  • Salt to taste
  • 1/ 2 tsp sugar
  • 3 tspKashmiri chilli powder
  • 1 tbspdhaniyajira powder
  • 1 tspgaram masala
  • 1/2 tsppepper powder
  • 2green chillies
  • 1/2 tspjira
  • 8-10curry leaves
  • 2green chillies
  • 1 tbspCoriander stem chopped
  • Coriander
  • Oil for frying
  • Water as required

    First ready all the ingredients. Peel the raw baby potatoes and halve them and keep in water for 10 minutes.

    Mix all the marinade ingredients:
    Cornflour, rice, flour, besan, curd, lemon juice, red paste, chilli-ginger paste, sugar, salt and all the dry powder masalas.

    Add some water and make a smooth marination. Let it rest for 10 minutes.

    Now heat some oil and half fry the baby potatoes to 50% cooked level. Add some salt to the frying potatoes. Now take out the half fried potatoes and drop them into the marinade.

    Mix to coat each baby potato well. Rest this arrangement for 30 minutes.

    Meanwhile, ready all the ingredients for the Final Finish. Slice onions. Finely chopped garlic and ginger. Chop coriander and coriander stems. Keep aside.

    Heat oil again and fry the marinated baby potatoes. Fry crispy.Keep aside. These are very tasty and crispy and can be served as a starter.

    For the Final Finish:
    Heat 3tsp oil. Add in jira, chopped garlic and ginger. Cook until reddish.

    Add coriander stems and slices onions. Add green chillies and curry leaves.

    Saute for 2 minutes. Add in some salt, chilli powder and garam masala. Add in the leftover marinade. Mix.

    Now add in the crispy double fried baby potatoes. Mix. Add little water as required.

    Cook for 3-4 minutes. Add some coriander. A super tasty starter BABY POTATO 65 is ready.

    Serve hot.
