To prepare this recipe I chose a special selection beer made with real pumpkin and spices, it seemed a very appropriate beer for this special time of the year, I combined it with a side of baked squash topped with Parmesan cheese. The bitter touch of the beer made with the real pumpkin and spices mixed with the cream achieve a very tasty sauce that combines perfectly with the sweet of the squash side. I was introduced to this unusual Guamanian dish (pronounced KILL-a-gwen) by my brother's wife, whose mother is from Guam. If you don't like the tart tanginess of lemons, which I LOVE, you can tone it down a bit by increasing the coconut milk and decreasing the lemon juice. Maggie Conlon -

Seared Tuna or Bonito Coated in Sesame (with Garlic Ponzu Sauce) Seared Tuna or Bonito Coated in Sesame (with Garlic Ponzu Sauce)
-I thought up a different way to enjoy tuna sashimi using ingredients that can be found in any household.Since the flavor is simple and easy to eat, even the elderly or guests will enjoy this dish.-Basically, don't overcook it. The point is not to cook the sashimi, but to brown the sesame seeds.-You could also add your choice of vegetables, such as sprouts or radish sprouts.-The fragrance and savoriness of the sesame seeds are a simple touch to increase the richness of the fish. Fried Eggplant in Spicy Coconut Milk Sauce (FOFOKI) Fried Eggplant in Spicy Coconut Milk Sauce (FOFOKI)
FOFOKI is what the Ternate people call eggplant smothered in a spicy coconut milk sauce. Eggplants are cut and then cooked by frying, baking or steaming and then covered with coconut milk sauce. The savory taste of coconut combined with just the right spicy seasoning and crunchy eggplant is great. The history of how FOFOK originated is not known, but the dish has been known since long time by the people of North Maluku (especially Ternate). Note: I did not include photos when sautéing the sauce because the steam and smoke made the images not turn out... Dapoer-Indonesia @ us -
