I wanted to make a teriyaki chicken that was nice and tender even after cooling. I seasoned the chicken to my liking.

The katakuriko potato starch flour will tenderize the meat and help coat it with the sauce.
Use preserved plums for the sauce.
Make a big batch and freeze. For 5 lunch box portions. Recipe by Ryo---ko

Ingredients

5 servings
  • 1Chicken thigh
  • 1 dashSalt and pepper
  • 1 tbspplus Katakuriko
  • 2 tbsp★Soy sauce
  • 1 tbsp★Sugar
  • 1 tbsp★Sake
  • 1 tbsp★Mirin

Steps

  1. 1

    Trim off the excess fat (it's not good for your health!) and cut into small pieces.

  2. 2

    Put the chicken into a plastic bag with salt and pepper. Mix well.

  3. 3

    Add the katakuriko and some air. Shake the bag vigorously!

  4. 4

    Fry the prepared chicken in a frying pan until golden brown and flip over. Continue to cook with a lid on.

  5. 5

    After both sides are golden brown, add the mixed ★ seasonings and allow the sauce to coat the chicken pieces well! (You can freeze them.)
