Steps

Firstly, heat the dalda ghee or any other ghee on low flame.

On the other side in a big bowl, add salt and ajwain into it.
shown in image and mix well. - 3
Knead the dough by adding the melted ghee and knead without adding water so that it should become crispy.
while kneading dough you can make a ball to check its consistency.
Then as per the need add water appropriately. - 4
Make small balls from maida dough and make it into puri form using roller and also put cuts as shown in image.
deep fry the maththi until it turns golden brown and check it should be crispy. - 5
Now take tawa size maida ball from dough and make it into big roti size and cut into long finger size Nimki as shown in the image.
now deep fry the Nimki until it turns golden brown. - 6
Finally, Diwali punjabi Maththi and Nimki is ready.
serve hot.
also can served as evening snacks.
