Braised white beans with spinach and grilled chorizo
Cooking Instructions

In a deep cooking pot, place 1 lb. of white beans and cover it with plenty water. Let the beans to soak in water overnight. Next day, drain the beans and add 5 cups of chicken broth, bring the liquid to a boil, reduce the heat, and cook the beans until soft, for about 1 hour.

In a large frying pan, sauté onions and garlic. Add red peppers, celery and carrots, cover and let the vegetables to sweat and brown a bit.

Add beans with some of the liquid, salt, pepper, parsley, and cilantro. Cover the pan and let it cook until vegetables are soft. Add spinach, mix, let it cook for 2 minutes and turn off the flame.

Cut the chorizos in slices and grill them. Serve on top of braised beans.
