Ingredients

  1. For Brownie Bottom
  2. 5 ouncessemi sweet chocolate, chopped
  3. 1/4 cupunsalted butter
  4. 1large egg
  5. 1large egg yolk
  6. 1/4 cuplight brown sugar
  7. 1/4 cupall purpose flour
  8. 1/2 teaspoonvanilla extract
  9. 1/8 teaspoonsalt
  10. For Vanilla Cake Layer
  11. 1/2 cupunsalted butter, at room temperature (1 stick)
  12. 1 1/2 cupsgranulated sugar
  13. 1 cupall purpose flour
  14. 1/4 teaspoonbaking powder
  15. 1/8 teaspoonsalt
  16. 2large eggs
  17. 3 1/2 tablespoonswhole milk
  18. 1 teaspoonvanilla extract
  19. Chocolate Glaze
  20. 8 ouncessemi sweet chocokate
  21. as neededwhite sprinkles

Cooking Instructions

    Preheat the oven to 350. Spray 12 standard muffin tins with bakers spray

    Make Brownie layer

    Melt butter and chocolate in the microwave until smooth, cool to room temperature

    Add brown sugar, vanilla and salt and stir well

  5. 5

    Add egg and yolk and blend in

  6. 6

    Add flour and stir until oncorporated

  7. 7

    Divide into cupcake tins evenly, Bake 5 minutes, remove to cool 15 minutes and prepare vanilla cake layer

    Make Vanilla Cake Layer

    In a bowl whisk together, flour, baking powder and salt

    In another bowl beat butter and sugar until light and fluffy

    Beat in eggs and vanilla

    Fold in flour mixture alternating with milk.

    Divide batter evenly over brownie layer and bake about 15 minutes until set. Cool completely before removing from tindpns

    Make chocolte glaze

    Melt chocolate in the microwave until smooth d

    Dip tops in chocolaye

    Add sprinkles while chocolate is wet and allow to set

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
