Rice Sevai Upma

Rice sevai can be a healthier alternative for regular sevai, easily cooked into varieties of dishes. In this version I have used veggies available in the season and freshly grated coconut. Either make for breakfast or a quick-dinner, or for evening snack, works well for all purposes.

Rice sevai can be a healthier alternative for regular sevai, easily cooked into varieties of dishes. In this version I have used veggies available in the season and freshly grated coconut. Either make for breakfast or a quick-dinner, or for evening snack, works well for all purposes.
Steps

Cook the vermicelli in boiling water for 7/8 minutes. Drain and set aside. In the mean time get the veggies ready.

Heat oil in pan, temper with mustard seeds, urad dal and chana dal, followed by onions, green chilies and curry leaves.

Add cauliflower and carrots along with broken cashews. Let these veggies get cooked in low flame until tender. Now add the capsicum, salt, turmeric, grated coconut and give a good mix.

Mix the vermicelli and add the last ingredient: lemon juice and then just enjoy!!!
