Ingredients

  1. Hamhock
  2. 3 lbsDiced Ham
  3. 3 BagsBeans (Small Red Beans, Blackeyed Peas, & Black Beans)
  4. 56 ozCanned Diced Tomatoes in sauce (2 x 28oz cans)
  5. 2Sweet Yellow Onions
  6. 4Bay Leaves
  7. 1 tChili Powder
  8. 1 TLawry's Seasoning Salt
  9. 2 tGround Pepper
  10. 2 tSea Salt
  11. 1 TParsley
  12. 1 TBasil
  13. 1 TWorchestershire Sauce
  14. 3 TGarlic Minced
  15. 32 ozWater (4c)
  16. 64 ozChicken Broth (8c)
  17. 32 ozVegetable Broth (4c)
  18. 4 TOlive Oil
  19. 6 TCoarse Kosher Salt

Cooking Instructions

    Overnight soak: Pour in 4qts of water and add the coarse Kosher salt. Stir until dissolved then add the beans and soak for a minimum of 4 hours but 12 hours is the best.

    Prep ingredients: Mince onion and garlic and set aside together. Measure out all the dry ingredients and set aside. Cube up your ham and set aside.

    Heat up your soup pot over Med. High and then add the olive oil. Then add the onion & garlic and saute for about 4 mins.

    Pour in the chicken, vegetable broth, and water. Add the cans of tomatoes and hamhock, making sure the hock is submerged.

    Bring to a boil, reduce the heat, add the dry ingredients, Worchestershire sauce, bay leaves, and simmer for 1 hr.

    Take out the hamhock. (If there's meat on it you want to take off then you can freeze it for 30 mins. to cool it down.) Add the beans and turn the heat up to high.

    Once the pot is boiling reduce heat to low and simmer for an hour.

  8. 8

    Add the ham from the hock and/or any extra ham you have and simmer for another hour.
