Ingredients

1 jar
  • 1 1/2black radishes (from the garden for me, recipe link for the remaining half radish)
    Raifort maison
  • 1/4 cupapple cider vinegar (about 50 grams)
  • 1/4 cupwhite wine (about 50 grams, Côtes de Gascogne for me)
  • 1 1/2 tablespoonsgranulated sugar (about 20 grams)
  • 1/2 teaspoonfenugreek seeds
  • 4cloves
  • 1 pinchnutmeg
  • 3 tablespoonscoarse sea salt
  • 2bay leaves (from the garden for me, tip in link)

    Remove the radish greens (tip in link)

    Peel, wash, and dry the radishes, then cut them into small pieces

    Place the radishes in a shallow dish, add the coarse salt, cover, and let marinate for 1 1/2 hours at room temperature

    After this time, rinse the radishes thoroughly to remove the salt, drain them, pour the white wine and vinegar into a saucepan, and place the saucepan over low heat

    Add the sugar, fenugreek, bay leaves, nutmeg, and cloves, and bring to a boil

    Let simmer for 5 minutes, sterilize a jar, and place the black radish inside

    Pour the boiling liquid over the radishes, seal the jar, and turn it upside down (tip in link), let it cool completely before turning it right side up, label it, and wait 10 days before consuming

Tips

Comment avoir du laurier du jardin toute l année

Je récolte et fais sécher à plat des petites branches de laurier lors de la taille de mon laurier sauce je les mets ensuite dans un grand panier tressé en bambou naturel

Que faire avec les fanes de radis du jardin ? (anti gaspi)

Lorsque je récolte beaucoup de radis et que je n ai ni le temps ni l envie d utiliser les fanes je les congèle et les cuisine en sauces, soupes etc il suffit de les laver soigneusement

Comment réussir des sauces et confitures sans stérilisation préalable

Après avoir lavé et ébouillanté les pots les remplir les fermer et les retourner à l envers

Comment réussir les conserves maison au vinaigre

Il faut impérativement conserver les pots à l abri de la lumière et dans un endroit frais et sec pendant leur macération afin de ne pas dénaturer le goût des conserves
