Grandma's apple stack cake is moist and rich with warm spices. This recipe was originally an Appalachian wedding cake.
Cooking Instructions

Cream together
brown sugar, Crisco, eggs, cinnamon, and vanilla - 2
Add 1/2 tsp baking soda
Add enough self rising flour to make the consistency of biscuit dough - 3
Split into 8 balls, press into greased pans

Bake at 350° for 10-12 min
- 5
Put hot, cooked, dried apples between layers
- 6
Let cool, refrigerate for 24 hrs before serving

I thought maybe since there are so many apples in this cake, it is low in calories and so it often has been featured as a snack at my house. This recipe uses a relatively modest amount of sugar, so don't reduce it further.Adding just the cinnamon is tasty, but I like to bake this cake with cinnamon, cardamom, cloves, nutmeg and ginger. I wanted to use up one whole apple in a delicious cake!I use a cake tin which does not need parchment paper. If you do need it, line your tin. If you can't find Kogyoku (Jonathan) variety apples, then I recommend using other baking apples, but even Fujis and Jonagolds are fine in this.
