This apple crumb cake is a crumb lovers coffee cake. Moist with fresh apple and a ripple of spiced crmb in the center and on top. It's good warm or room temperature and freezes well in slices to have on hand.

  1. For Crumb
  2. 2 cupslight brown sigar, packed
  3. 2 1/4 cupsall purpose flour
  4. 1 1/2 teaspooncinnamon
  5. 1/4 teaspooneach nutmeg and ground ginger
  6. 1/8 teaspoonsalt
  7. 1/2 cupHeath Toffee bits
  8. 8 ounces (2 sticks)butter, melted
  9. For Cake
  10. 6 ounces (1 1/2 sticks)butter, at room temperature
  11. 1 cupgranulated sugar
  12. 2large eggs
  13. 1 cupsour cream
  14. 1 1/2teapoon vanilla extract
  15. 2 cupsall purpose flour
  16. 1 1/4 teaspoonbaking powder
  17. 1/2tea baking soda
  18. 1/8 teaspoonsalt
  19. 1/4 teaspooncach ground cinnamon, nutmeg and ground ginger
  20. 3/4 cupdiced peeled and cored granny smith apple
  21. For Glaze
  22. 1 cupconfectioner's sugar
  23. about 4 tablespoons heavy cream
  24. 1 teaspoonvanilla extract

Cooking Instructions

    Preheat the oven to 350. Spray a 9 inch springform pan with bakers spray.

    Make Crumb

    In a bowl whisk together flour, brown sugar, cinnamon, nutmeg, ginger, heath toffee bits and salt until combined

    Add the melted butter and stir gently to form moist crumbs. Set aside and make cake.

    Make Cake

    In a bowl whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg, set aside

    In a large bowl beat sugar and butter until light and fluffy

  9. 9

    Add eggs one at a time beating in each eggg, beat in vanilla

    Add sour cream and coombine

  11. 11

    Add flour mixture and stir until a thick batter is formed

    Spread 1/2 of batter into prepared pan, using a off set spatula or back of spoon to evenly spread batter in a thin layet

    Add apples evenly

    Top apples with about /2 of crumb mmixture

    Top with remaining batterr

    Top with remaing crumb mixture plsce on goil lined pan and bake about 50 to 60 minutes until a toothpick has only a few moist crumbs. Cool completely in pan

    When cool realease sides of springform pan and glaze

    Glaze Cake

    Beat together confectioner's sugar, cream and vanilla until smooth, adding drops more cream if it seems to thick

    Glaze cake, slice and serve

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
