Ingredients

  1. 48 ouncesyellow potatoes I used small
  2. 2 tablespoonsschmaltz
  3. 1 stickbutter
  4. As neededsalt
  5. As neededwater
  6. 1 tablespoonItalian seasoning
  7. 1-1/2 cupschicken broth

Cooking Instructions

    Peel the potatoes and cover the potatoes in water to remove excessive amounts of starch and keeping the potatoes from turning brown from oxygen exposure. Preheat oven to 425° Fahrenheit

    Heat the butter in an oven safe cast iron skillet add the potatoes and schmaltz. Fry for 3 minutes the gently turn the potatoes with a pair of thongs or a spoon. Season with seasoned salt.

    Fry for 3 minutes more. Turn once more. Carefully pour the chicken broth in the skillet with the potatoes. Season with Italian seasoning. Put into the oven for 40 minutes or until fork tender. The broth will be absorbed a bit. Let rest 12 minutes.

    Serve with a bit of the liquids over the potatoes. I hope you enjoy!!!
