Sattu ki litti chokha bihari platter

If there's one combination that
is the hallmark of Bihari cuisine,
it is the Litti Chokha. This is
basically a very traditional and
rustic dish of spiced sattu
(roasted black chickpea flour)
stuffed whole wheat dough
balls called Litti. This is classically paired with a simple veggie mash essentially with onion, green chilies and mustard oil, called the chokha. It
is a delicacy in the food culture of both Bihar as well as Jharkhand.
.What is Litti Chokha
Litti Chokha together forms a really brilliant combo consisting of varied flavors and textures. I have shared the recipes of Baingan Ka Chokha Tomato Chokha or tomato chutney and potato chokha in this post.
It is one of the most popular street foods as well in Bihar and eastern Uttar Pradesh in North India.

Ways to cook Litti
These are a few methods through which you can cook Litti at home.
• Baking in oven: This post
mentions this way of cooking.
• Roasting on tawa: Flatten the shaped Littis and roast them on a hot tawa on low flame. You have to cook these till you see charred spots on them.
• Grilling on tandoor: If doing so, grill till they are cooked and slightly charred.
• Deep frying in oil: For doing so, shape them like kachoris and deep-fry in hot oil. Make sure to seal them properly or else they can disintegrate or fall apart while being fried.

Steps

Brinjal chokha -
Roast brinjal on flame and remove its outer covering.
Take a pan add cooking oil till heated add chopped onions until it will golden brown then add chopped tomatoes on it.
When tomatoes becomes soften then add roasted brinjal pulp beat it and mix it well with cooked onions and tomatoes well with the help of spetulla. - 2
Add salt and red pepper powder on it
Mix it well with the help of spatulla. - 3
After a minute of frying add Garam masala on it.Again mix it well and fry it on medium flame with stirring in short intervals of time for 3 minutes.

Take it in a serving bowl for serving in lunch or dinner.

Potato chokha -
Mash boiled potatoes.
Take a pan add cooking oil till heated then add long slices of onions when it becomes golden brown then add chopped tomatoes on it.
Stir it well not cook more. then add mashed potatoes and stir it well. - 8
Add red pepper powder and salt on it mix it well and cook for 2 minutes with contineous stirring with spetulla.

Take it in serving bowl for serving in lunch or dinner.

Litti -
Knead dough of wheat flour and keep it aside for 5 minutes.
Then make small balls from it. - 11
For Filling -
Take sattu or roasted gram flour add salt and red pepper powder on it.
Then add cooked cooking oil and mix it well. - 12
Take a ball of kneaded dough of wheat flour and make a bowl shape with the help of fingers.
Fill sattu mixture in it. - 13
Cover it from all sides and due to deep frying occur for all balls then with the help of hands and fingers flattened it slightly.

Put all flattened sattu filled balls of wheat flour dough balls in a preheated cooking oil for deep frying

Remove from oil when it becomes golden brown.

Take it in a serving plate for serving in dinner or lunch.
