Technically, these aren’t true croquettes since they don’t use béchamel, but they look like croquettes and taste amazing. We’re celebrating International Croquette Day.

Make mashed potatoes using potato flakes. We use this method because it results in a finer, drier mash. Use only 1 cup of water and 1 cup of milk. When it comes to a boil, add salt, then stir in the potato flakes and a generous drizzle of olive oil. Mix well and let the mash cool.

For the filling, remove the casing from the blood sausage and heat it until it crumbles. Transfer to a bowl and mix with the caramelized onion (prepare the onion following your favorite recipe).

To assemble, take a small portion of mashed potatoes and flatten it into a patty. Place some filling in the center, close it up, and shape into croquettes.

Coat each croquette in flour, then beaten egg, then breadcrumbs. Fry until golden and enjoy.
