Bourbon Bacon Beef Sliders

Ingredients

  1. 1.5 lbssliced London Broil, from deli dept
  2. 1 pkgslider rolls (12)
  3. 12 slicesdeli cheddar cheese, not processed stuff
  4. TbspMelted butter, about
  5. 2 Tbsppoppy seeds
  6. 12Bacon slices,
  7. 1/2 cupbourbon or whiskey
  8. 1 cupbrown sugar
  9. 1/2-1 tspcayenne pepper

Cooking Instructions

    Make the bourbon bacon: In small pot, bring to boil the bourbon, brown sugar and cayenne pepper. Simmer until it reduces, 15 or more minutes. Put bacon slices on baking sheet lined with foil and sprayed with cooking spray. Brush both sides of bacon with bourbon mixture. Bake at 400 degrees until done, turning once and basting again.

    Preheat oven to 350°F.
    Place the bottom half of the slider buns in a greased casserole dish.
    Place a layer of roast beef over the bottom buns.
    Top with a layer of cheddar cheese slices.
    Finish with a layer of Bourbon Bacon slices.
    Place the top buns on the sliders.
    Cover the dish with foil and bake for 10 minutes, then remove the foil, brush the slider buns with melted butter and sprinkle with poppy seeds.
    Continue baking for another 10 minutes.

    Slice, serve, and enjoy. Goes good with homemade coleslaw
