This is a great way to eat up kimchi fried rice by using it in a frittata (baked egg dish).

This is a great way to eat up kimchi fried rice by using it in a frittata (baked egg dish).
Steps

Preheat the oven to 350 degrees

Grease a 1-quart casserole dish.

Reheat the fried rice (microwave or stove is fine) and pour into the casserole dish.

Whisk eggs and milk together. Then pour over the rice and stir until everything is combined.

Sprinkle shredded cheese on top. If adding, sprinkle the chives over the cheese.

Put in the oven and bake for 20-25 minutes until cheese is golden and the middle is solid. If you gently shake the dish, the middle shouldn't wiggle. If it does, that means the eggs aren't done and cook for 5 more minutes.

Let cool for 5 minutes before digging in!
