Peel and cut the sweet potatoes into cubes.

Wash the bell peppers, remove the seeds after cutting off the stems, and slice them into strips.

Peel the red onion, remove the core, and slice it thinly.

Place the sweet potatoes, bell peppers, and onions on a baking sheet lined with parchment paper.

In a bowl, mix 5 tablespoons of olive oil with the turmeric, curry powder, smoked paprika, smoked garlic, salt, and pepper, and evenly distribute this mixture over the vegetables. (This is when I added my leftover jarred feta, drained)

Cut the top off the head of garlic to expose all the cloves, drizzle with a little oil, season with salt and pepper, and wrap it in aluminum foil before placing it in the middle of the vegetables.

Bake for 30 minutes at 430°F (220°C) in the preheated oven for the vegetables. Remove them from the oven, and leave the garlic head wrapped in foil for another 30 minutes to ensure it is well roasted.

Serve on a bed of rice (I used konjac rice) with the roasted garlic cloves as a topping.
