Ingredients

  • Dough:
  • 3parts medium semolina (about 2.2 lbs or 1 kg)
  • 1/2part all-purpose flour
  • 1 teaspoonsalt
  • 1part fat (about 1 cup or 8.8 oz margarine (250 g) plus oil)
  • 1part liquid (about 1 cup or 8.5 fl oz water (250 ml), mixed with orange blossom water)
  • Filling:
  • 1.1 lbsdate paste (500 g) + 1/2 teaspoon ground cinnamon + 3 tablespoons toasted sesame seeds + 2 tablespoons oil or margarine + orange blossom water

Steps

    Sift the semolina, flour, and salt into a large bowl. Pour in the melted margarine and oil mixture, then rub together with your hands until the mixture is sandy (do not knead). Let rest for 30 minutes.

    Add the water and orange blossom water mixture, and gently mix just until you have a smooth, cohesive dough. Make sure the dough is well moistened, then let it rest for a few moments.
    Prepare the filling: Knead together the date paste, sesame seeds, cinnamon, oil, and orange blossom water until well combined.

    Divide the semolina dough into small portions and shape each into a log (add a little water if the dough is dry). Make a groove down the center of each log, then insert a stick of date filling into the groove. Pinch the dough closed with your thumb and index finger, then roll again to smooth the log.

    Cut the logs into small diamond shapes. Shape each piece with your fingers, then fry in enough oil to fully submerge the makrout (do not turn them during frying).

    When the makrout are golden brown, remove them and dip them in a warm mixture of honey and a little orange blossom water. (Before serving, dip them again in the honey mixture.)
