Gather your ingredients, peel the potatoes, and slice the mushrooms.

In a blender or food processor, combine the lemon zest and juice, olive oil, 1 tablespoon honey, 1 tablespoon mustard, and 3 garlic cloves. Blend well.

Pour the mixture over the potatoes, season with salt and pepper, add the thyme and rosemary, and mix thoroughly.

Place the potatoes and mixture in a Dutch oven, add the mushrooms, and pour in the water.

Drizzle the pork chops with olive oil, season both sides with salt and pepper, gently rub them, and place them on top of the potatoes, making sure they don't sink into the liquid.

Place the Dutch oven in a well-preheated oven at 350°F (180°C) and bake for 1 hour.

In a small bowl, mix 1 tablespoon honey, 1 tablespoon mustard, 1 tablespoon soy sauce, and grate in 1 garlic clove. Stir to combine.

Remove the Dutch oven from the oven, brush the top of the pork chops with the mixture, return to the oven uncovered, and bake for 10 minutes. After 10 minutes, remove, flip the chops, brush the other side, and bake for another 5 minutes.
