Heat a skillet and dry roast the semolina for 5 to 6 minutes until fragrant. Set aside.

Add oil to the skillet. Once hot, add peanuts, cashews, and curry leaves. Sauté until lightly golden, then remove and set aside.

If needed, add a little more oil to the skillet. Add mustard seeds, chana dal, and urad dal. Sauté briefly, then add the chopped vegetables and a pinch of salt. Cook until the vegetables are slightly tender.

Add the roasted semolina and stir for 1-2 minutes. Pour in water and add salt. When the upma thickens, add the fried peanuts, cashews, and lemon juice. Mix well.
