Cucumber Raita

Am aware of the ingredients that go into making a homemade Raita . Plain Yoghurt , Mint and Cucumber if you are making a Cucumber Raita . I have made my own version . The Internet said you needed to peel and deseed the Cucumber - I did not do that - plus Lemon juice was mentioned - I did not add lemon juice - and the adding of white sugar was mentioned - I did not add sugar - did add some grinds of Sea Salt in though . Some water from the Cucumbers was removed , but I had extra leftover Plain thick Yoghurt too thicken slightly the bit watery Raita

Cold water soak the raw mint in a large mixing bowl

Cold water wash the 2 Cucumbers under the cold water tap and then trim the ends off with a small sharp Kitchen knife and then place the Tefal slicer disc onto the attachment of your Tefal and then turn onto full power and then through the funnel of the Lid of the Tefal place the whole Cucumbers through. Transfer to a empty large mixing bowl

Place raw fresh Mint into your Tefal and then add 1KG whole big tub of Greek Yoghurt in as well and then let the 2 blades of the Tefal Attachment with the Tefal Lid on - turn and blitz on full speed until Mint is smooth and in tiny pieces

Add the Tefal sliced Cucumbers to the minty Yoghurt and then only use the pulse cycle on your Tefal or briefly turn on medium cycle and then when the Cucumbers are in small pieces - then transfer too a large Mixing Bowl and then season with One teaspoon of Sea Salt - stir - and then add the other 1KG of Plain Greek Yoghurt - stir - and then add another One teaspoon Sea Salt - stir - and then transfer into solid Plastic Containers with lids

Leave in the Fridge for at least 3 hours or preferably overnight. The sauce is ideal with a very hot spicy Curry
