Deep-Fried Mehikari Fish - Super Delicious!

Have you heard of the deep-sea fish 'Mehikari'? It's a specialty of Iwaki City! When deep-fried, you can even eat the head, and it's delicious. Super easy and tasty! The origin of this recipe: I wanted to enjoy the Iwaki City specialty 'Deep-Fried Mehikari' at home, so I adapted it. This version is lightly seasoned, but adding a small amount of pre-made karaage flour mix can make it taste even more like the izakaya version.

Rinse the mehikari fish quickly with water and pat them dry thoroughly with paper towels.

In a plastic bag, combine potato starch, salt, and pepper, and mix lightly. Add the dried mehikari fish, inflate the bag with air, seal it, and shake to coat the fish evenly with the starch mixture.

Pour about 1/2 inch of vegetable oil into a frying pan and heat over medium heat. Once hot, add 4 to 5 mehikari fish and fry for 6 to 8 minutes, turning occasionally.

Arrange shredded cabbage on a plate and neatly place the deep-fried mehikari on top to serve.
