Tender Cold Shabu-Shabu with Budget Pork Slices

  • 14 oz (400 grams)pork shoulder or pork stir-fry strips
  • 1 tablespoonsake (or dry white wine)
  • 1 teaspoonsugar
  • 1/4 teaspoonsalt
  • as neededLettuce,
  • 1eggplant
  • as neededSalad oil,
  • Chilled Shabu-Shabu Sauce: Refreshing Lemon Grated Daikon Soy Sauce (ID:19414656)
  • 4 tablespoonssoy sauce
  • 2 1/2 tablespoonsmirin
  • 4 teaspoonshoney
  • 2 teaspoonsvinegar
  • 4 teaspoonslemon juice
  • 4 teaspoonssugar
  • 1 teaspoonJapanese soup stock powder (dashi granules)
  • 4 teaspoonswater
  • About 7 oz (200 grams) daikon radish

Steps

    [Sauce Preparation]
    1. Peel the daikon radish and grate it. Place the grated daikon in a strainer and press with the back of a spoon to squeeze out excess liquid.

    2. In a microwave-safe bowl, combine sugar, dashi granules, and water. Microwave at 600W for 40–50 seconds.

    3. Add soy sauce, mirin, vinegar, lemon juice, and the squeezed grated daikon to the bowl from step 2. Mix well.

    [Prepare the Vegetables]
    Slice the eggplant in half lengthwise, then cut into thin slices. Sauté both sides in a frying pan with salad oil. Wash and tear the lettuce into bite-sized pieces.

    [Prep the Pork] Cut the pork slices into bite-sized pieces. Add sake, sugar, and salt in order, massaging each in well.

    Fill a pot with enough water and bring to a boil. Reduce to low heat, then add the pork pieces one at a time, spreading them out.

    When the pork changes color, remove it and place it in a bowl of water. Change the water to cool the pork, then drain in a strainer.

    If you want the pork even colder, chill it in ice water, then drain.

    Arrange the lettuce and eggplant on a serving plate, top with the pork, and pour the sauce over everything.
