Tender Cold Shabu-Shabu with Budget Pork Slices

Even with inexpensive pork slices, if you massage them with sake, sugar, and salt like the Salt Chicken Prep (ID:18949649), the meat stays tender even after chilling.
Recipe Background:
I noticed that shabu-shabu meat sometimes gets tough after chilling, so I tried prepping it the same way I do with chicken breast. It turned out nice and tender.

Steps
- 1
[Sauce Preparation]
1. Peel the daikon radish and grate it. Place the grated daikon in a strainer and press with the back of a spoon to squeeze out excess liquid. - 2
2. In a microwave-safe bowl, combine sugar, dashi granules, and water. Microwave at 600W for 40–50 seconds.
- 3
3. Add soy sauce, mirin, vinegar, lemon juice, and the squeezed grated daikon to the bowl from step 2. Mix well.
- 4
[Prepare the Vegetables]
Slice the eggplant in half lengthwise, then cut into thin slices. Sauté both sides in a frying pan with salad oil. Wash and tear the lettuce into bite-sized pieces. - 5
[Prep the Pork] Cut the pork slices into bite-sized pieces. Add sake, sugar, and salt in order, massaging each in well.
- 6
Fill a pot with enough water and bring to a boil. Reduce to low heat, then add the pork pieces one at a time, spreading them out.
- 7
When the pork changes color, remove it and place it in a bowl of water. Change the water to cool the pork, then drain in a strainer.
- 8
If you want the pork even colder, chill it in ice water, then drain.
- 9
Arrange the lettuce and eggplant on a serving plate, top with the pork, and pour the sauce over everything.
