Ingredients

  1. 1 kgmedium eggplants, "aubergine"
  2. 1 cupall-purpose flour
  3. vegetable oil for frying
  4. salt to taste

Cooking Instructions

  1. 1

    Remove aubergines’ stems and peel them. Then cut into 1 cm thick slices and sprinkle each one with salt and flour. Let it drain for ten minutes.

    Fry the aubergine slices in very hot oil until they turn dark brown from both sides.

  3. 3

    Remove from oil and place on paper napkin to dry.
