Preheat the oven to180°C

Cream the butter and sugar in a large bowl or food mixer until it is light and fluffy but not stiff

Crack the egg into a separate bowl and check for shell before adding to the mixture. Whisk lightly then add half at a time to wet ingredients. Finally add the vanilla extract.

Mix together the flour, baking powder and then add to the wet ingredients

Add in the cranberries and oats then begin to mix with your hands untill it turns into a dough
- 6
Grease a backing tray then roll the mixture in to smallish balls before carefully flattening. Repeat untill all of the mixture is on the tray (you may have to grease another one)

Put into the oven and bake for 15 minutes untill the edges are just going a light golden colour
