I created this recipe one dinner and was pleasantly surprised with how tasty it was. I want to share it with everyone. Very easy to make. The recipe below makes 1 large wrap. Serve warm or cold.

I created this recipe one dinner and was pleasantly surprised with how tasty it was. I want to share it with everyone. Very easy to make. The recipe below makes 1 large wrap. Serve warm or cold.

Ingredients

1 servings
  1. 1/4of a sweet potato, sliced at medium thickness
  2. 3white button mushrooms, sliced
  3. 1/4of a capsicum, cut up
  4. 1/4of a red onion, diced
  5. 1/2an avocado
  6. 1 handfulbaby spinach
  7. Lemon juice from 1/2 of a lemon
  8. Siracha
  9. Paprika
  10. 4-5 clovesgarlic, crushed
  11. Salt
  12. Pepper
  13. Chives
  14. Olive oil
  15. Your choice of wrap bread

Cooking Instructions

  1. 1

    Prepare sweet potato. Mix crushed garlic,paprika and salt together. Dip sweet potato pieces in olive oil then cover in garlic-paprika mix

    Put sweet potatoes in oven at 180° on bake for 30 minutes (15 minutes on each side)

    Prepare mushrooms,onion and capsicum for stirfry.

    Put vegetables in a pan and cook with olive oil. Add salt, pepper, chives and siracha. Stir until cooked.

    Prepare avocado. Mash avocado with fork and add the juice of half a lemon. Add salt and pepper.

    Spread avocado mash all over wrap. Put baby spinach, stirfried vegetables and sweet potato on to wrap. Add cheese if desired. Wrap it up and its ready to eat!
