I decided not to pay the supermarket to make my lunch anymore. Those expensive meal deals cost as arm and a leg, so I adapted this from my favourite recipe. It has turned out better then I could have hoped.

Ingredients

  1. 1Wrap or Tortilla Wrap
  2. Main ingredients
  3. 2 tbspHummus
  4. 1 tbspof Mango Chutney OR 3 Sundried Tomatos. Not both.
  5. 4Falafels
  6. Veggie blend
  7. 200 gramsSpinach (cooked & shredded)
  8. 200 gramsCarrots (grated)
  9. 1 bunchCoriander to taste (optional)
  10. Optional Cheese
  11. 100 gramsof soft cheese like Feta or Goats' cheese is best for this recipe. Cheddar and similar cheeses also work well.

Cooking Instructions

    Spread Hummus and, if using, Mango Chutney.

    Add veggie blend and Sundried Tomatos, again if using.

  3. 3

    You can warm the Falafels according to packet instuctions, but I prefer not to. Otherwise, wrap and heat for 30 odd seconds in a microwave. Enjoy!

I keep it simple. There's no need to use 100 ingredients, so my own recipes reflect that. I like slow cooking(or cookers) and ethnic foods. Vegetarianism is the path i'm walking down right now. I'm also working on a healthier lifestyle in general, so any help is appreciated.
