Our Yaki Udon with Tempura Bits

Our yaki udon features a savory sauce and crunchy tempura bits mixed in. Instead of sprinkling bonito flakes on top, we mix them in for extra flavor!
About this recipe:
This is my mom’s classic recipe, with our family’s twist of adding tempura bits and bonito flakes to the yaki udon.

Steps
- 1
Slice the sausages into rounds. Thinly slice the onion and roughly chop the cabbage.
- 2
Heat 1 teaspoon oil in a skillet. Add the sausages and onion, and sauté. When they start to soften, add the udon noodles and 3 1/2 tablespoons water (about 50 ml). Cover and steam briefly.
- 3
Gently loosen the noodles while stir-frying, then add the soy sauce and okonomi sauce. Mix well. Once combined, add the tempura bits and bonito flakes, toss quickly, and serve.
