In a small oven proof dish place the olives without pits.

Add 3 pieces of lemon peel, generous amounts of fresh peeled and sliced garlic, dried thyme or oregano, wine, and oil.

Bake slowly for up to 1 hour until there is just a trace of liquid and Olives have that baked look. Serve warm.
