Put the egg white and sugar in a pot and heat over low heat. Stir with a wooden spatula until the sugar is no longer grainy, then turn off the heat. This takes less than a minute.
* Be careful not to whip the egg white! - 2
Add the coconut and cinnamon, and mix with a wooden spatula. Shape into cones with your fingers and place them on a baking sheet.

Bake slowly at 250°F (about 120°C) for about 60 minutes to dry them out. Depending on your oven, check at 230°F to 265°F (about 110°C to 130°C). Once baked, let them cool in the oven.
