These are all the ingredients you need! Beat the egg and preheat the oven to 350°F (180°C).

Add the beaten egg and vegetable oil (and vanilla extract, if using) to the pancake mix. Mix until no dry flour remains.

Divide the dough into 4, then each piece into 4, then each of those into 2, to make 32 pieces. Roll each piece into a ball.

Use a knife to score the tops to look like melon pan.

For a more authentic melon pan look, sprinkle granulated sugar on top if you have it.

Bake in the preheated oven at 350°F (180°C) for 7–8 minutes, then they’re done!

If the dough is too stiff: Since the only liquids are egg and oil, the dough texture can change depending on egg size. If your egg is small, add a little milk to adjust.
