Heat the boiled udon noodles in the microwave at 600W for 1 minute per pack. Since this is for 2 servings, heat for 2 minutes.

Wash the cabbage thoroughly, remove the tough core, and roughly chop. You can thinly slice the core and add it too.

Julienne the carrot and bell pepper, and thinly slice the onion.

Heat vegetable oil in a frying pan and add the pork, cut into bite-sized pieces. Stir-fry over medium heat. Keep the heat at medium for the rest of the cooking.

Once the pork is cooked through, add the carrot, bell pepper, and onion, and stir-fry.

When the carrot, bell pepper, and onion have softened slightly, add the cabbage and stir-fry.

Add the boiled udon noodles while the cabbage still has some crunch. Use chopsticks to gently separate the noodles and mix with the other ingredients.

As the noodles heat, they will soften and mix more easily. Be careful not to break the noodles by forcing them apart; mix gradually.

Once everything is roughly mixed, add the ★ marked seasonings. When the flavors are well combined, it's done.

Serve on a plate and top with bonito flakes, aonori, and pickled ginger if desired. Enjoy while hot.
