Easy Curry Udon with Ready-Made Curry

A quick and easy curry udon for a solo lunch using ingredients you probably have at home. Having ready-made curry on hand is a real lifesaver!
Recipe background:
I used to make this dish often for lunch when I worked part-time at a temple. It was one of the meals I could prepare in the kitchen there. The curry soba version was also delicious, and it tasted great with kishimen noodles too!

Ingredients

Serves 1 serving
  1. 1serving (as much as you want) udon noodles
  2. 1 packetready-made curry
  3. 3-4 tablespoonsmentsuyu (double-strength noodle soup base)
  4. 2-4 tablespoonshot water (adjust to your preferred strength)
  5. Optional: sliced green onions, kamaboko (fish cake), or other toppings

Steps

    Cook the udon noodles according to package instructions—boil if dried or fresh, or thaw if frozen.

  2. 2

    While the noodles are cooking, heat the ready-made curry in hot water or in the microwave. Slice the green onions and kamaboko if using.

  3. 3

    Add 3 to 4 tablespoons of mentsuyu to a bowl and dilute with hot water to your desired taste. (If using straight or triple-strength mentsuyu, dilute in the same way to taste.)

  4. 4

    Add the cooked noodles to the bowl. The soup should just cover the noodles or be slightly below the top of the noodles for best flavor.

  5. 5

    Pour the heated curry over the noodles, add your favorite toppings, and enjoy!
