Easy One-Egg Omurice

Use whatever ingredients you have on hand. This is a simple way to make the classic omurice I used to eat at my high school cafeteria. You can easily wrap the rice beautifully with just one egg.
Recipe background: By arranging the rice a certain way, you can neatly wrap omurice with just one egg.

Steps

  1. 1

Sauté the onion, sausage, and mixed vegetables in oil. Add the rice and stir-fry until the rice is separated and heated through.

  2. 2

Season with ketchup, salt, and pepper to taste to make ketchup rice. Transfer the rice to a bowl and set aside.

  3. 3

Beat 1 egg with a pinch of sugar until well mixed. Pour into a greased frying pan and spread evenly.

  4. 4

Tip: It's important that the egg easily releases from the pan, so heat the pan well after adding oil before pouring in the egg.

  5. 5

Immediately place the ketchup rice onto the left half of the egg (if you are left-handed, use the right half).

  6. 6

Tilt the pan toward the side with the rice while gently shaking, so the uncovered part of the egg folds over the rice. Flip the omurice onto a plate, seam side down.

  7. 7

It’s easier to flip if you hold the plate and pan together in a wide V shape. It’s hard to explain in words, but give it a try!

  8. 8

Even with just one egg, you can wrap the rice neatly without tearing.
