Corn Kakiage Fritters
Kids love these, and they disappear fast! Be sure to try this recipe when corn is in season. I highly recommend eating them with just a sprinkle of salt.
Recipe background:
I was inspired to make this after enjoying a delicious version at a friend’s restaurant.

Steps
- 1
Remove the husks from the corn and use your hands to separate the kernels. It’s a bit of work, but using your hands instead of a knife gives the best results.
- 2
Add the flour to the corn and mix well, then add the water and mix again.
- 3
Heat oil to 320°F (160°C).
- 4
Wet your hands with water, gather the mixture into portions of your desired size, and gently place them into the hot oil.
- 5
Fry until golden and they float to the surface. Sprinkle with salt or dip lightly in salt before eating.
