Serves 2 servings

1 piece(about 10.5 oz) chicken thigh
2 teaspoonssake (for marinating)
1 teaspoonginger, optional (for marinating)
as neededPotato starch,
■ Seasonings
1 tablespooneach sake and sugar
2 tablespoonseach mirin and soy sauce

Poke holes in the chicken thigh with a fork to help the flavors soak in. Cut into bite-sized pieces, sprinkle with sake, and let sit for about 5 minutes. Add ginger if desired.

Coat with potato starch and fry. About 1 tablespoon of oil is enough. The chicken will release oil as it cooks.

Once one side is browned, flip and brown the other side. When both sides are browned, cover and steam-fry. It will be done in about 7-8 minutes.

Once cooked, remove the lid and use a paper towel to remove excess oil. Less oil helps the sauce stick better. Then add all the seasonings.

Once the sauce starts bubbling, it's done. It bubbles quickly, so it only takes a moment.
Feel free to add mayo or sesame seeds if you like♫
