I wanted to recreate the tender katsu from tonkatsu restaurants at home, so I gave it a try. This is sure to be a big hit! (^^)v

Remove the skin from the chicken breast and slice it diagonally into bite-sized pieces.

Place the chicken pieces, salt, sake, and mayonnaise in a zip-top bag. Massage to coat, then refrigerate until ready to fry (the longer it marinates, the more tender it will be).

Mix the flour, water, and mayonnaise together to make the batter.

Put the panko breadcrumbs in a zip-top bag and crush them with a rolling pin to make them finer.

Dip the marinated chicken pieces into the batter, then coat with panko. Fry until golden brown (about 3 minutes).

Try serving with sweet chili sauce and lemon juice for dipping—these disappear fast! Highly recommended!
