Ingredients

  • 8boneless skinless chicken thighs
  • 1/4 cupolive oil
  • 1yellow onion thinly sliced
  • 4 clovesgarlic thinly sliced
  • 1preserved lemon thinly sliced
  • 1 knobginger peeled and minced
  • 1 tspcoriander
  • 1 tspground cumin
  • 1 tsppaprika
  • 1.5 tspsalt
  • 1 pinchSaffron
  • 1 cupchicken stock

Steps

  1. 1

    Combine all ingredients except stock in crockpot. Massage into chicken.

    Add chicken stock

  3. 3

    Cook in Low for 6 hours

  4. 4

    Shred chicken. Serve over couscous or brown rice
