Ingredients

  1. 8boneless skinless chicken thighs
  2. 1/4 cupolive oil
  3. 1yellow onion thinly sliced
  4. 4 clovesgarlic thinly sliced
  5. 1preserved lemon thinly sliced
  6. 1 knobginger peeled and minced
  7. 1 tspcoriander
  8. 1 tspground cumin
  9. 1 tsppaprika
  10. 1.5 tspsalt
  11. 1 pinchSaffron
  12. 1 cupchicken stock

Cooking Instructions

  1. 1

    Combine all ingredients except stock in crockpot. Massage into chicken.

    Add chicken stock

  3. 3

    Cook in Low for 6 hours

  4. 4

    Shred chicken. Serve over couscous or brown rice
