Cut the tenderloin in half and rub with salt and pepper.

Heat a frying pan and sear the meat with some vegetable oil. In the open space, cook the king oyster mushrooms, cut into bite-sized pieces, and set aside.

Transfer the tenderloin to a pot, add the demi-glace sauce, water, and seasonings, and simmer on low heat for 25-30 minutes, turning the meat occasionally.

Cut the tenderloin into serving pieces and serve with the cooked mushrooms and boiled spinach cut into 1.5-inch pieces. Generously pour the sauce over everything.
